We'll have waffles!


It just happens.  I wake up on Saturday morning and want to make either pancakes, french toast or waffles.  I'm not complaining really, but offering indulgent, comforting, gorgeous food!

Basic Waffles 
(from The Joy of Cooking)

I added bananas and walnuts this time.  (And baking soda instead of baking powder. That didn't taste good at all. Call it life in the decaffeinated lane.... But if you follow this recipe correctly you will succeed.)

Pull together in a bowl:
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt

In another bowl combine:
3 eggs
1/4 cup melted unsalted butter
1 1/2 cups milk

Add the wet ingredients to the dry ingredients and stir to combine (don't over stir).  
Now add your special ingredients (fruit, nuts, cheese, coconut - the list goes on!)

I used an electric waffle iron to cook mine.  Preheat the iron, pour only a couple ladles of batter into the middle as the batter notoriously spills over the edge.  Keep waffles warm in a 200 degree oven while you finish your batch.
